Sprout, lettuce and pepper salad

  • ½ cup boiled mixed sprouts
  • 1 cup capsicum cubes (red)
  • 1 cup iceberg lettuce, torn into pieces
  • 1 tbsp chopped spring onion greens
  • Salt to taste
  • ½ cup low-fat curds
  • ½ tsp lemon juice
  • Salt and freshly ground black pepper 
  1. For the dressing: Combine low-fat curds, lemon juice and spices in a bowl and mix well. Keep aside.
  2. Combine the sprouts, red capsicum, lettuce, spring onion greens and salt in a bowl. 
  3. Pour the low-fat dressing over the salad and toss well.
  4. Refrigerate for at least an hour. Serve chilled.

Per serving: 48 calories; 0.3 g fat; 7.6 g carbohydrates; 3.8 g protein; 1 g fiber.
